Why, on almost exactly the stroke of 2:00 a.m. every night for the past couple of nights, must the pipes in my room start bonking and clanging loudly?

If you turn off the radiator, you can only hear clanging from other rooms, which is much less loud. Though it might make your room too cold...my room is surrounded by warm rooms/lounges and has small windows, so it gets about the right amount of heat in this weather even with the radiator off.

It's not the radiator, but the network of steam/hot water pipes that run across the ceiling and through my closet. I don't think I can do much about that... which is why my room is always searing hot at night and I have to keep the window open.
