would we be better physicists if our professors never gave partial credit?

No. We wouldn't be physicists. Physicists are known for being pretty thick-skinned about their grades (or, studies show, physics majors who aren't particularly thick-skinned drop out), but it would be too much. Or our grades would be sufficiently curved that it would basically be the same as it is now.
